高档日料餐厅——凹砚·墨雪，坐落于南京商业中心新街口。“墨雪”，基于凹砚品牌，是在南京首店基础上提出的融合料理新概念。力邀三厘社团队操刀，提升这间新店整体的空间质感。餐厅主体由公区、包间与露台三部分组成，在本项目中，三厘社团队将庭院与街巷的线索引入空间意趣之中，在场所营造里蕴藏对融合日料精神的思考，为顾客提供一场颇具独特仪式感的就餐体验。

A high-end Japanese restaurant, Ao Yan·Ink Snow, is located in the commercial center of Nanjing. "​Ink Snow" is a new concept of fusion cuisine based on the first restaurant in Nanjing. We are responsible for improving the overall spatial texture of this new store. The main body of the restaurant is composed of three parts: public area, private room and terrace. In this project, TRIOSTUDIO introduces the clues of courtyards and alleys into the space interest, and contains the thinking of integrating the spirit of Japanese food in the place creation, providing customers with unique dining experience.

古砚聚墨，砚在研动时才灵光乍现，墨在白纸挥毫间方能四溢清香。面对初始场地中的高差和纵深问题，我们以街巷氛围作为贯穿空间的序列线索，路径动线铺设空间围绕，转角即风景。在室内外边界的模糊化处理中，让视觉与嗅觉相交辉映，低调的环境氛围衬托精致料理的食物，使之成为聚焦主角。

Facing the problems of height difference and depth in the initial site, we take the atmosphere of the streets and alleys as the sequence clues running through the space, and lay the space around with the path moving lines, and the corners are the scenery.

Differentiated design of platform

设计团队追求东方美学中的“移步易景”，在幽明含蓄的氛围中丰富空间感受。客人从餐厅入口通过幽邃的过道，步履曲折地经过露台，芦苇掩映间隐约可感受到室内的就餐氛围。包间与公区过道形成微妙的正负关系，地梁过高的场地弊端在高度错落设计的地面和台阶间被消隐，朴素而缜密的空间秩序在保证氛围的同时使得场地利用率高效化。层叠过渡的路径让空间的整体性与边界性被重塑。在室内风景与城市景观的交映中，重新定义日料空间的场所精神。

The designer pursues the "moving and different scenery" in the oriental aesthetics, enriching the space experience in the dark and subtle atmosphere. From the entrance of the restaurant, guests pass through a claustrophobic aisle, zigzag through the terrace, and the indoor dining atmosphere can be vaguely seen among the reeds. There is a subtle positive and negative relationship between the private rooms and the corridors of the public area. The disadvantages of the site with high ground beams are eliminated between the highly scattered ground and steps. In the interaction of indoor and urban landscapes, it redefines the place spirit of the Japanese space.

步行通过露台后进入餐厅，首先映入眼帘的是开放且明亮的开放料理台。作为餐厅空间氛围的视觉核心，明档区的长板料理台可供料理师进行创作，并且与周边尺度灵活的包间进行视觉上的交互。食物、料理师与客人借此被相互联接。包间的设计在空间感受上侧重虚实结合，经由露台和料理台才能正式进入的包间规格单元。每个独立的包间或有高度适宜的窗户感受露台气氛，或有由半透材质组成的移门，可充分感受公区明档的板前料理氛围，在保证适当私密性的同时又让包间与客人本身也成为餐厅景观的组成部分。

Entering the restaurant after walking through the terrace, the first thing that catches the eye is the open and bright front of the board. As the visual core of the restaurant's space atmosphere, the plate can be used for cooking creations by chefs and visual interaction with the surrounding private rooms with flexible scales. The design of the private room focuses on the combination of virtual and real in terms of spatial experience.

光之礼赞
Praise of Light

谷川俊一郎在《阴翳礼赞》中写到 “美，不存在于物体之中，而存在于物与物产生的阴翳的波纹和明暗之中。” 光线之美，不舍昼夜。我们从空间氛围出发，着力于呈现凹砚的品牌气质，在空间整体把控中以尺度严谨的木制格栅与竖直线条元素作为立面的包覆，尽可能摒除冗余装饰，芦苇景观自然点缀，低调的暗灰砖纹配合地台打光下的枯石带，在黑灰侘寂中静溢野趣，沉淀独特的非日常用餐仪式感。

We start from the atmosphere of the space and stand on the brand temperament of the concave inkstone. In the overall control of the space, we use the rigorous wooden grille and vertical line elements as the cladding of the façade, and try to eliminate redundant decoration as much as possible. A unique sense of non-everyday dining rituals.

设计团队借助 “幽密”、“消隐”的光影效果使室内包间与户外露台在不同光景时节中体现丰富的感受层次。
The design team uses the "secret" and "hidden" light and shadow effects to make the indoor private rooms and outdoor terraces reflect rich layers in different seasons.

Scenery container

在餐饮功能之外，社交露台被赋予了更丰富的感官属性。蜿蜒步道、碎石地面与临风芦苇在四季变换中充分调动了来客的情绪。视觉随时节变迁，自然的风景借此延伸至空间内部，客人在凹砚墨雪感受到的是味觉、嗅觉、视觉与体感的共同变换。

In addition to the dining function, the terrace is endowed with richer sensory attributes. The meandering trails, gravel ground and wind-facing reeds fully arouse the emotions of visitors in the changing seasons. Vision changes at any time, and the natural scenery extends into the interior of the space. What guests feel in the concave inkstone and ink snow is the common transformation of taste, smell, vision and body sensation.
